Kim,
There are several things that could be going wrong here, most of which
have something to do with how you setup or installed your Remoting
components.
We are using Remoting (and OpenAMF) here without *any* issues.
Are you using the version 2.0 components?
How did you install them? Did you install using the default installer?
Did you install the source files?
How are you invoking them?
I highly recommend downloading the SOURCE Remoting files from here
(scroll down until you see "Source Code for Macromedia Flash Remoting
for Flash MX 2004 ActionScript 2.0"):
http://www.macromedia.com/software/flashremoting/downloads/components/
Follow these instructions for installation:
http://www.macromedia.com/support/documentation/en/flash_remoting/mx2004/readme_source.html
Once you get there you should be fine as long as you invoke Remoting correctly.
