If you're running Unix, CoMo (http://como.intel-research.net/) works really well. Apparently people have made it work on Windows under Cygwin, although I don't have any experience with that. And it has no GUI, but who needs that anyways ;)

What open source tool do you use to capture the HTTP traffic, including AMF,
XML, text etc.?
Something like Netconnection Debugger (but better :) ) or Service Capture?
