What OS are you running?

I have UTF-8 working in Emacs on Gnu/Linux, but I've never tried it on Windows or Mac.

I'm not sure what you mean when you say that it asks you which Emacs you want to use. Do you mean Emacs or XEmacs? I use the standard Emacs.

The built-in Lisp is the best part! My customizations can be found here: http://blog.pettomato.com/?p=12. They are a little out-of-date, but they should work.

It definitely took me a little while to learn and get used to Emacs, but it didn't take too long to be productive and now I wouldn't use anything else.
