These 2 tools are really useful for components:
The component explorer lets you see all the components in Flex and
see the MXML to create them:

The style explorer lets you play with the styling properties of each
component, then you can copy the css out and paste it into your
application stylesheet:

If you want to look at older versions, you may have to navigate from
the devnet site - not sure where they are anymore - but this site is
useful in itself:

I am always looking in the API reference then the developers guide
if I get stuck, but the developers guide is so goddam slow, I get fed up
of waiting for it to load half the time - this happens if you click on
"view the examples" in the API docs (maybe oneday Adobe will do some
nice javascript communication between the API docs and my already open
tab with the developer reference in so I don't have to keep loading up a
new page...).
Also, Flex Builder has contextual help - you can hover over a bit of
MXML and get help on it - hold down CTRL, hover over the variable / type
you are interested in (it shows up like a hyperlink). Clicking on
"types" will take you to source files, pressing F1 brings up contextual
help in the side panel. Smooth.
