do I put that in etc/profile?
Also what about java location? Do I put that in etc/profile as well or in
bash.profile. I really don't want to run red5 as root, but I don't know how
else to run it other than root.

try setting the path to the ant .jar file explictly:
CLASSPATH=$CLASSPATH:/path/to/the/ant.jar
export CLASSPATH
Your error message shows that the necessary ant classes can't
be found to compile Red5.
