Yup - and there are a ton of "do it yourself" Wii sensor bar demos on
YouTube if you do a search.  The Wiimote just looks for two points of
infared light, so any two light sources will work (unless it's something
like a blacklight :) ).   So be aware of other lights around your
Wiimote -  for example, some people who got Wiis for Chistmas had
trouble when they set up the sensor bar too close to the Christmas tree.
